About Us

Domenica Bertolusso and Beppe Montanaro, founders of the company, started their experience in the “truffle world” in 1968, marketing the fresh truffle from the Piedmont region.

During that period, their restaurant “Da Beppe”, located in the heart oRistorante da Beppef Alba, was considered a landmark by truffle and mushrooms lovers and by the Michelin guide. Tartuflanghe was born in 1980 to exploit Beppe’s experience and creativity, built through a prestigious formative experience: he was a “Chef Soucier” on cruise ships from 1958 to 1966, teacher in a Culinary Institute, chef in the best piemontese restaurants and then owner of his famous restaurant. The company’s name derives from an intuition that Domenica had: she joined the Italian word for “truffle” with the name of the origin territory of this precious tuber, the Langhe area.

The first specialities with truffle were created to give people the opportunity of also tasting the truffle when not in season. Thanks to this insight, in 1990 the first Pasta with truffle in the world was created in the Tartuflanghe laboratory: “Tartufissima”, Italian fantasy name meaning the best of truffle. In 1992 it was awarded as best new product of the year award at the “Summer Fancy Food Show” in New York. After the Tagliolini with truffle ready Risotto, Polenta and Cheese fondue were also created. The genuine recipes from the piedmontese traditional cooking prepared by Beppe have given the company the possibility to immediately enter in the high gastronomic market.

In 2005 the confectionery laboratory was opened – totally restored and extended in 2011 – to produce the Tartufi Dolci d’Alba, famous chocolate and I.G.P. Piedmont hazelnuts pralines and have permitted the company to also enter in the high confectionery market. Thanks to the factory extension works, that lasted almost two years, the company has duplicated the surface destined to production and warehousing, and created new spaces such as the Show Room and the new tasting room with a professional kitchen. More than 40 million pralines are produced each year for the Tartuflanghe brand and also for many private brands.

In the last years Stefania and Paolo joined their parents in the management of the firm and they have inheritated Domenica and Beppe’s experience, enthusiastically bringing new ideas to the prestigious family tradition.

Since many years the company is proud holder of the “Eccellenza Artigiana” (Artisan Excellence title), awarded by the Piedmont Region for its thirty-year experience in the culinary world.

The production

Tartuflanghe offers more than 100 different recipes: a big variety of Italian specialities and truffle products made through an accurate selection of raw materials. The quality is guaranteed by the high professional competence used during the production, the respect of tradition and the handcrafted methods along with technology and innovation.
Tartuflanghe products are to be found in the best gourmet shops and delicatessen in Italy and all around the world. Thanks to the wide range of products also in restaurant size, Tartuflanghe collaborates with the best restaurants, hotels and Top Chefs in Europe, USA, South America, Australia and the Middle East and Far East.

Tartuflanghe supports the environment, especially the Langhe and Roero areas (UNESCO world heritage sites) which give us such renowned products.

Thanks to the new photovoltaic system and 1400 sqm of solar panels on the roof of our offices, Tartuflanghe is now able to produce its own green energy and is self-sufficient (the system produces more energy than what is needed).

We have recently renewed and doubled the production area, the offices, the warehouse and the store. Our premises are now developed on 6500 sq m. and we can welcome our guests in a brand new show room with a tasting room and professional kitchen. Visitors from all over the world are always welcome, since transparency is very important to the company.

Certifications

Tartuflanghe achieved the IFS – International Featured Standards and BRC – British Retail Consortium international certifications, both recognized by the Global Food Safety Initiative.

These International standards are considered a fundamental qualification in the Food industry and also a chance to demonstrate commitment to food safety, quality, and legality, and to work on continual improvement. The requirements are related to the quality management system and the HACCP system, supported by detailed prerequisite programmes, that is a set of GMP (Good Manufacturing Practice), GLP (Good Laboratory Practice) and GHP (Good Hygiene Practice) requirements.

BRC – The BRC Global Standard for Food Safety was developed by British retailers to ensure best practises for product safety: based on the “due diligence” concept (the capability to be able to demonstrate that every reasonable measure has been taken to avoid an incident), the European retailers have established specific standards to ensure food quality, safety and legality for the related steps in the food and beverage supply chain.

IFS International Food Standard – The IFS (International Food Standard) was developed by German, French and Italian retailers in order to guarantee the fulfillment of the food quality and safety requirements and legal compliance, and to provide a tool for food safety performance improvement.

Company visits

The new facilities
We have recently renowned and doubled the production area and the store. Our premises are now developed on 6500 sqm. and we can welcome our guests in a brand new Show Room with a Tasting Room and Professional Kitchen. It is possible to visit the company: we welcome groups upon reservation, from a minimum of 8 to a maximum of 50 people.

The visit
The visit is made up of two moments: the guided visit to the kitchen and workshops, where we prepare the handmade pasta, the sauces, the condiments, where we select the truffles and the chocolate atelier, where it is possible to see the chocolate production. The visit lasts about 40 minutes. The guided tasting of our specialties in the show room, where we offer a buffet of our products: Parmigiano Reggiano cream with truffle, Salmon cream with truffle, Creamy cod fish with Taggiascan olives, local cheese to go with Acacia honey with white truffle and Fig chutney with balsamic vinegar from Modena, Moscato wine cream and our renowned sweet truffles.

All these specialties are offered with a glass of local red wine (Dolcetto d’Alba or Nebbiolo d’Alba) and water. The tasting lasts about 40 minutes. It is possible to organize a truffle hunt with the truffle hunter and its hound in our “tartufaia”, a woodland where we harvest the black truffle under some ancient oak trees. The truffle hunter will tell you about the secrets and show you the skills required in this ancient and mysterious hunt.

Our showroom

Come and visit us our showroom and you will find a complete exposition of our products, from the first pasta with truffle ever produced (Fancy Food Show, New York 1992), to the Truffle Perlage, awarded as “Most innovative product” (Sial, Paris 2010). We also expose the fresh truffles picked up during the night, the precious and rare specialities “food from friends”, and great exclusive wines. In 2010, Tartuflanghe was the first company to present the freeze-dryed “noH20 Truffle”: 100% freeze-dried fresh truffle through a sophisticated technique that takes out the moisture of the truffle, without using any additive or chemical process. An innovative product that keeps the flavour and taste unchanged for a long time and enhances its features when placed on warm dishes.

In the same year, after a lot of research and experimentation, Tartuflanghe presented a new innovative product, winner of the “Tendences and Innovation” award in Paris at the “Sial 2010”: the Perlage ® (truffle juice in pearls).The tasty winter black truffle juice, obtained through direct extraction from the truffle during its cooking, is shaped in small pearls that that to the eye and in consistency are similar to caviar, but have the taste of truffle.
